Local flavours: the cooking of Montemurlo

Peasant cuisine with a unique flavour

Prato may be best known today for its textile industry, but the town's roots are in the peasant tradition. This is reflected in the local cuisine which offers simple dishes enriched by garden vegetables and fresh herbs. Pork is one of the main ingredients, so much so that, at Montemurlo, there is mini-industry of sausage making which is carried on by a few historic families who still raise their own swine  for slaughter and curing.
