The Ancient Mulino Parrini is located in Sant’Agata, in the municipality of Scarperia e San Piero, flanking the Cornocchio stream. This medieval watermill is equipped with millstones that were in operation at full capacity until the 1960s. The structure was later saved and kept in working order by the family of the last miller, Tonio Parrini.
There is even an interesting detail related to these walls: during the “Tuscan Revolution” of April 1859, which culminated in the fall of Grand Duke Leopold II of Tuscany, the then-owner Bettino Ricasoli used the mill as a secret refuge to escape incognito from the turmoil in Florence. Thanks to its historic significance and excellent state of preservation, the structure has been included in the Associazione Italiana Amici dei Mulini Storici.
Today, the mill is used exclusively for grinding heirloom grains, including Verna and Gentilrosso, all of which are certified organic and produced by farms in Tuscany and the Mugello area.
The Mulino Parrini can also be visited by prior arrangement with the Associazione di Promozione Sociale Mulino Parrini, which organizes tours and offers visitors an up-close look at the mill’s history, its historic structures and how the millstones work.
