These most famous biscuits from Prato are absolutely delicious. Gourmets disagree over whether they should be dipped in Vin Santo and eaten that way or if the biscuits and Vin Santo should be taken together but separately. We are on the fence, they taste great however you eat them!

500g flour
250g sugar
150g melted butter
200g sweet almonds
4 eggs (one for coating at the end)
some grated lemon rind

Mix the flour, sugar, 3 eggs, lemon rind and yeast, then slowly add the butter. The mixture should be soft. Add the almonds and continue to mix with your hands. Divide the mixture into long strips and place on a baking tray. Before baking, brush with a beaten egg yolk. Bake in a hot oven for 15 minutes. After cooking, cut the biscuits into the classic shape and put back in the oven for a further 5 minutes. Enjoy with a glass of Vin Santo.
