Soffritto
Soffritto is at the base of many dishes prepared within a tuscan kitchen. This simple flavor base is typically italian although the french have an identical version called mirepoix.
There is a substantial difference however, the french use butter and the italians use extra virgin olive oil. Soffritto gives sauces, meat stews and soups a distinct flavor that will also give that italian twist to all your recipes!
All you need is celery, carrot and white onion in equal amounts. There are however a couple of details that make a huge difference: the olive oil must be of excellent quality and the heat must be very low or the flame should be as low as possible.
