Francesina Recipe
Tuscan cuisine is filled with recipes that tend to reuse whatever had been previously cooked. The leftover beef recipe is one of them! We're not sure on the reason to its name "francesina" many food historians say that the recipe is somehow connected to the french bœuf miroton a very similar beef recipe that uses abundant quantities of onion.
Ingredients
- 6-7 onions
- 12 large sage leaves
- 500 g leftover boiled beef
- 1 cup of broth
- 400 g canned tomatoes
- 5 tbs olive oil
- salt and pepper
Preparation
Thinly slice onions. Saute them in a large pan using olive oil. Add the sage leaves. When the onions have turned golden add the canned tomatoes always keeping flame low. Add salt to taste. Take your leftover beef (you should have also kept some of its broth aside) and slice it not too thick or thin placing slices all around your pan without doubling up. If your sauce dries up, used the meat broth you had set aside previously and add some. Cover and cook for 15 minutes turning beef slices over. Add freshly ground pepper and serve.
