Sopressata of Giustignana is a round, pressed cold-cut. It’s made with pieces of pork that would not otherwise be used. First, the head is boiled, along with the animal’s heart, tongue and kidneys. The meat is then made into sausages, and seasoned with salt, spices and flavors. The end result is a spicy, very tasty salami.
