Dinner at Castle: Spiced citrus carrot soup with almonds

This is not just an ordinary soup. It's the creamy spiced citrus carrot soup with almonds from Castello di Brolio restaurant in the heart of  Chianti. It was prepared using only fresh vegetables from the garden by the skilful Silvia, the main chef at Osteria del Castello. A perfect recipe for a light first course. Thanks Silvia!

Ingredients
  1. 500 g of carrots
  2. 1 white onion
  3. 50 g of butter
  4. Salt and pepper to taste
  5. Zest of 1 lemon
  6. Zest of 1 orange
  7. Roasted almonds

Method
  1. Chop the onion finely and sauté it in a pot with butter and oil
  2. Peel the carrots, slice them and add to the pot
  3. Sauté the carrots with the onions for a few minutes
  4. Add the vegetable broth to cover the carrots, season with salt and pepper Cook until the carrots are soft and blend everything
  5. Grate the peel of the lemon and the orange and add it to the soup
  6. Serve and garnish with a pinch of well chopped roasted almonds and a mint leaf
