Amaretti biscuits from Carmignano

These delicious biscuits are a must for anyone with a sweet tooth. They are often referred to locally as ‘Amaretti di Fochi’ after the bakery in the town’s main square where they can be bought. Here is a recipe for anyone who wants to try to make them at home:

480g sugar
300g sweet almonds
30g bitter almonds
5 egg whites

Finely chop the almonds and mix them with the egg whites and sugar. Once the ingredients are well combined, leave to rest for 3 hours. Bake in the oven on sugar paper for 20 minutes at 160 degrees centigrade.
