Hands-On heritage: artisan pastries and boutique wines in an experience on the Pisan hills

Hands-on experience in the workshop of a renowed pastry maker learning how to make traditional Tuscan cakes and cookies, followed by a guided visit to a very original micro-winery located in the middle of a medieval village.

This activity is led by your private tour guide who will be with you for the whole day and explain plenty of interesting facts about the rural area you will be visiting. The first destination of this day-tour is the busy workshop of a renowned pastry maker, a brilliant master of Italian and Tuscan pastry, able to create all sorts of fanciful cakes, cookies and chocolate creations.

The experience begins with a welcome toast with the pastry chef and an introduction to the principles of pastry making and baking. You will start with the preparation of typical Tuscan Cantuccini, asa biscotti: at first you will focus on the selection of the best ingredients, then you will proceed with making a perfect dough and finally you will learn how to make your Biscotti cookies nice and crispy during the baking. Another very interesting preparation is Tiramisù, by far the most famous dessert in the Italian cuisine. You will follow the chef in all phases of preparation, learning a lot of tips on how to try and make it again when you are back home. Surprisingly, you will see how easy and satisfying it is to make a great Tiramisù!

The experience continues with the creation of thin aniseed-scented wafels called Nozze, a local specialty from Tuscany, very rare to be found anywhere else in the country. The class will be focused also on the preparation of savory dishes like Focaccia, a typical flat bread called “schiacciata” in Tuscany. This preparation will need some understanding on how to handle fresh yeast and it will allow you to have a great meal at the end of the class, based on focaccia accompanied by cold meats and cheeses, and of course all the sweet creations you just made. The day continues with a short trip to reach a nearby village called Morrona, a tiny hilltop town with great views and a lot of history right in the middle of an enchanting wine region. This will give your guide a perfect opportunity to show you panoramic vineyards for great photo opportunities.

The day experience continues at a very picturesque micro-winery, right in the middle of the village of Morrona. The winemakers will show you their little winery, created in small spaces within some ancient buildings in town, parts of which are dug directly into tufa rock. You will learn some very interesting stories about the family project behind the winery right before sitting in a very welcoming century-old tasting room to taste 4 excellent local wines, served with a series of delicious local products. This tour is a great occasion to meet some very friendly local characters and see Tuscany through its little rural villages.
