This experience is designed for those who wish to combine the pleasure of good food with a mindful exploration of one of the most precious ingredients of Mediterranean cuisine: high-quality extra virgin olive oil.

We will guide you through the discovery of its beneficial properties, how to best preserve it, how to recognize its qualities, and other essential insights to fully appreciate it. Each course of the menu, created by Chef Alessandro Berionni (who will accompany the lunch with detailed explanations and curiosities), will be paired with one of the oils produced by Casa Julia.

The menu includes:

  • Low-temperature egg, oil foam, and truffle: A delicate yet surprising start. The egg, wrapped in a buttery EVO oil foam, releases herbaceous notes that blend beautifully with the intensity of truffle. The low-temperature cooking preserves its creaminess, while the oil adds a fresh and persistent finish.
  • Potato caps, brown stock, and EVO oil snow: Light as clouds, the potato caps pair perfectly with a rich, umami-packed brown stock. The “snow” of EVO oil—crafted through molecular techniques—offers a unique thermal contrast and an explosion of medium-intense fruitiness.
  • Lightly marinated pork fillet, glazed vegetables, and shallots confit in EVO oil: The pork, marinated with EVO oil and aromatic herbs, is extraordinarily tender. Vegetables glazed with raw oil and shallots caramelized in hot oil enhance the natural sweetness of each element.
  • Dark chocolate and olive oil mousse with salted caramel: A bold finish. The 70% dark chocolate meets spicy EVO oil, balancing bitterness and roundness. The salted caramel adds a gourmet touch, while the oil ties all the flavors together with elegance.
