The Quaresimali are small-sized cookies that have the shape of the letters of the alphabet, cooked during Lent between Prato and Florence.
Their delicate taste is mouth-watering thanks to the unsweetened cocoa, and their lightness is due to the egg white used in their dough.

Ingredients

 

  • 3 egg whites, room temperature
  • 200 grams of sugar
  • 50 grams of hazelnuts, finely chopped until they are a paste
  • 150 grams of 00 flour
  • 50 grams of unsweetened cocoa
  • 1 teaspoon of baking powder
  • 1 pinch of salt

Preparation

Beat the egg whites until stiff and slowly add the sugar until the mixture is glossy and fluffy.

Add the chopped hazelnuts.

Sift the flour with the cocoa, the baking powder and the salt and add everything to the mixture.

The mixture should not be too soft because the cookies must hold their shape that will be given to them with a pastry bag.

Bake spaced-out at 150° for about 15 minutes.

Tips

You can also use hazelnut butter, which is hazelnuts chopped until you get a paste-like mixture. The amount is the same.
Once baked, let them cool before eating or put them in a tin box - where they will stay crisp for many days.
