Tigliate chestnuts

Chestnuts are perfect for long winter evenings by the fireside

Remove the external skin of the chestnuts (the inner layer will come away during boiling) and put them in a large pan. The chestnuts must be well covered by the water in the pan. Add a pinch of salt and a dried fennel stalk. Boil for approx. 30/40 minutes (depending on the size of the chestnuts), drain and leave to cool before eating.
