The Maremmana breed of cattle

  razza_maremmana In the Maremma area there is a breed of cattle protected by the Slow Food organization. It’s called Maremmana and it’s easily recognizable for its big horns. The Maremma breed can adapt itself to difficult situations and only grows in the wild. This is why you still find cowboys (or Butteri) on horseback following and driving their cows in the huge plains of the southern Tuscany. Slow Food protects this breed and recognizes its important place on menus at the best restaurants.It is used in the preparation of the florentine steak, but this incredible meat can be enjoyed also in local stews and sauces.
