Scarpaccia pie is a tradtional dish from Viareggio which is usually served at the end of a meal. It is easy to prepare and its flavour is a mix of sweet and savoury. It’s made from flour, sugar, eggs, melted butter, vanilla, warm milk and a pinch of salt. The ingredients are mixed together with finely chopped slices of courgette. The mixture is then poured into a greased and floured baking dish and cooked in a medium oven for one hour.
