This famous local cheese from Versilia is made from sheep’s milk. It is white in colour, delicate in texture and has a wonderful grassy aroma. It is usually matured for no longer than twenty days, although there is also a variety of the same cheese which is grated and this variety is matured for up to one year. The grated variety has a much sharper taste. These cheeses, both mature and fresh, go very well with pears or fresh broad beans.
