The area around Massarosa has always been known for its agricultural production of honeys, fruit, organic vegetables, aromatic plants and olive groves. Massarosa olive oil is produced from a single variety of olive and has a lightly fruity flavour and an intense green-yellow colour. The taste is a little sharp and tangy. After being harvested, the olives are stored for a short period in well-aired crates. They are then sent to the oil mill where they are pressed using traditional methods. The oil produced is stored in steel containers before being bottled. Any impurities come out of the oil in the steel containers.
